This MENU is an example of the delicious low-fat cuisine, prepared fresh every day at Pura Vida. Specific items vary each week depending on the availability of ingredients and the creative inspiration of our kitchen staff. |

SATURDAY
Breakfast - Scrambled eggs with sautéed vegetables, home-fried potatoes, homemade muffins, fresh fruit, yogurt, homemade granola, fresh juices.
Lunch - Spiced carrot soup, veggie and tofu wraps, a variety of mixed salads (grains, beans, vegetables, tofu), salad greens, home.
Dinner - Black beans and rice, Costa Rican cabbage salad, steamed vegetables, tortillas, fresh guacamole, pico de gallo, sautéed plantain.

SUNDAY
Breakfast - Whole grain pancakes with stewed apples, made-to-order omelets, fruit, yogurt, granola, juices.
Lunch - Chilled gazpacho, broccoli quiche, marinated tofu salad, variety of mixed vegetable salads and greens.
Dinner - Spinach soup, grilled fish, grilled tofu, pasta or roasted potatoes, sautéed vegetables, salad, whole grain garlic bread.
MONDAY
Breakfast - Typical Costa Rican - Gallo Pinto (rice and beans), scrambled eggs, grilled plantain, homemade salsa, fruit, yogurt, granola, juices.
Lunch - Garbanzo soup, tuna and egg salads, grain and vegetable salads, whole wheat rolls.
Dinner - Vegetable soup, grilled chicken, tofu nut loaf, mashed yuca (local root vegetable), mushroom gravy, steamed broccoli, salad. |

TUESDAY
Breakfast - Oatmeal, omelets, scrambled tofu, home-fried potatoes, fruit, raisins, yogurt, granola, juices.
Lunch - Lasagna or lentil burgers, assorted vegetable salads, garlic bread or buns.
Dinner - Squash soup, stuffed fish, tofu and vegetable stir-fry, brown rice, steamed vegetables, spinach salad.
WEDNESDAY
Breakfast -Omelets, corn quesadillas, black beans, fruit, yogurt, granola, juices.
Lunch - Miso soup, chicken and tofu salads, assorted vegetable salads, whole grain bread.
Dinner - Chicken and tofu enchiladas, red beans, roasted vegetables, guacamole, salad. |
THURSDAY
Breakfast - Gallo Pinto, scrambled eggs, homemade tortillas, salsa, fruit, yogurt, granola, juices.
Lunch - Tortilla soup, hummus, tabouli, pita bread, beet salad, avocado, mixed raw vegetables, salad.
Dinner - Onion soup, baked fish with coconut, Indonesian tofu curry, brown rice, steamed vegetables, salad.
FRIDAY
Breakfast - French toast, oatmeal, fruit, raisins, yogurt, granola, juices.
Lunch - Vegetable burritos, barley salad, bean and avocado salad, fresh cheese, assorted salads.
Dinner - Mushroom soup, breaded chicken, grilled tofu, polenta, ratatouille, salad. |
